This April, Austin is combating climate change by improving the food system, backed by a community challenge to take small actions throughout Earth Month.

The Eat for Impact initiative, led by local climate advocates, will help reduce Austin’s environmental footprint by creating greater access to food that is good for the planet.

Tempeh and Walnut Puree, Miso, Garlic-Marinated, Pickled Fresno and Mustard Red Frill: Tempeh rubbed in recado rojo (a mix of garlic, onion, chiles, oregano) and then grilled and braised until tender, then seared and brushed with garlic oil to make it crispy. Sliced like steak and served with a miso walnut puree, adding mirin for umami flavor. Garnished with pickled Fresno for acidity and extra texture, and local mustard red frill for bitterness and freshness.

Grilled Zucchini, Jalapeño Edamame Puree, Preserved Lemons, Cucumber, Green Onion: Cured & grilled tender zucchini, cucumber and zucchini marinated in squeezed lemons and a green oil made with learner tops from local green onions and leeks, all of which sits in a creamy and bright charred jalapeño and peeled edamame puree. It’s a refreshing and light dish at room temperature.
